I have not driven the 2.7 liter. For me, had to be manual, so 2.3 was it. Have Ford Performance tune on a 4 door Heritage, and while I wouldnt call it fast (have had a bunch of legitimately fast cars) it is not slow either. Feels appropriate for the vehicle at all times, never underpowered...
Used, installed and used for ~200 miles. Have bad shoulder and the extra effort just enough to give me some trouble. Height and throws are great.

I have had the Ford tune for ~2500 miles on my 2023 Heritage, I like it. rev downshift is nice, auto stop disable is fantastic. The extra torque is noticeable IMHO, and I saw no decline in fuel economy.
