The Kenda Klever MT2 is worth a look. I don't do a ton of mud, but everything I throw at these things so far, rock crawling, mud, deep snow, higher speeds, it has crushed. Just put the RT's on our Sprinter.

I shoot for 20 psi for off road fast driving, if it ends up being 17 psi that's about as low as I prefer to go just to allow some safety margin. If I don't want to air up before driving home I may do 25 psi.

Tire pens are available to make anything white, I hear they work well.
Make sure the bearing isn't damaged or anything else in the suspension isn't tweaked. At a minimum put your hands on the center cap areas after driving it a bit and make sure the suspect one isn't hotter then the others.
I think your throwing good money after bad. It is a 26# tire chosen because it has reasonable traction but mostly allowed a certain mpg. They wont magically become better because it is not a QC issue it is a design and weight issue.
