Raft guy weighing in. We use high volume compressors. Leaf blowers can work. DeWalt and Milwaukee make these small 12v blowers that are small and handy. If your only blowing up that dingy once in awhile you can make do with your compressor.

In Whitewater world we mostly use Partner Stoves. They are heavy duty aluminum and can take brutal beatings, sand and water intrusion. They are also infinitely rebuildable with readily available O Rings. The downside: expensive and relatively low btu.

You have limited room, I don't know your dimensions but the Jeep, and FJ crowd (and even Subaru) gravitate toward the 35 qt coolers. Certainly no bigger than a 55 qt. A fuller cooler also has less airspace, so the ice last longer too.
