There’s some good trails in the Ocala area. About 45 min northeast of Orlando. I’ve been up there a few times. It’s best going with others but there’s a lot of easier trails you can do alone when it’s dry without issue

When I fold my seats down, midway down I’ll do the headrest and have the top of the headrest pointing towards the floor. Does that make sense? if not I’ll send a photo

There’s a button on the side of the headrest I believe so you can fold it down so it doesn’t hit the seat. :)

I bought the same auxbeam and I love it. I didn’t mount my control panel where you did since I didn’t love the idea of drilling. I used one of the brackets that came with the auxbeam and tucked it in the gap you see in the photo. Doesn’t rattle, leak, or slide around.
