I think the 'easy button' would be to take it to a reputable RV dealer and have them install a braking system and lighting wiring. All vehicles that you would flat tow will require some sort of pedal pusher to activate the brakes, and special wiring to display brake lights and turn signals on...

I have had this happen a few times too... The times I've checked it's been a code in the brakes about lack of vacuum. It always goes away after starting and driving. I haven't nailed down exactly when it sets the code, but it doesn't seem to be anything of concern.

Did you remove the mirror shell in order to bolt the lights to it and run the wires? If so, any tips for removal? if not, how did you fish the wires and get nuts on the inside?

What brand safety cables are you using? Just tried the hooks that came with my Roadmaster Nighthawk, and while I think they will still work, they don't seem to have the same amount of clearance as yours. The hooks were just slightly narrower than the opening between the bumper and the skid...

Not officially. The Curt one might work after repinning, but I was worried that the integrated diodes they used wouldn't support the potentially higher current pulled by the incandescent bulbs.

I don't have 2 vehicles to compare to be 100% sure, but based on wiring diagrams there was no change in the tail light wiring from 21 to 22.

I haven't seen any good pictures of the Curt harness. Are the diodes built in to the connectors? Or somewhere else? Are part #'s or any rating info on the diodes accessible?

Not quite the same problem, I think... The video for the trailer plug harness is about making it work for a base tail lamp vs. LED. The Curt flat tow harness seems to have an issue where they connected the wrong pins causing the amber turn signals to be used for the combined turn and brake...
