A service manager called this "fine" after one of his techs filled a prefilled replacement engine with 200% of the oil capacity.

So Ford is aware that some owners (myself included) are seeing that 7 quarts reflects as 1 quart above the maximum line. Yet they have no idea why? And while they don't know why this is, we should distrust the dipstick and blindly put in 7 quarts? It'll be comical...
Just got back from the Moab Off-Roadeo, ALL of the Broncos there reeked of coolant like ours. So not sure what's going on but it's definitely a larger issue.
I can confirm the rocker armor fits with the factory running boards. (Swapped out the rock rails on our First Edition)
It has robust drainage holes, it only covers the "face"/doesn't wrap below, it is very well secured and looks like it should have from the factory!

Radiator cap is fine, no signs of pressure release. I removed and reinstalled.
Oil was the first thing I checked. No moisture on the oil fill cap. No milkshake on the dipstick. So all good there.
