Never had the doors open and or off while off road, however mud apparently made its way inside the door jams on all four doors. Ideas on how to clean this effectively? I feel like I should be careful with water given the wiring connections right there.

Water.

The cable connections have seals on them specifically to prevent water. Just don't attack it with a power washer and you should be fine.

Pressure washer with a lower pressure tip. Its how the car detailers do it. Just avoid spraying directly at the plug. The bit of mist that gets inside the vehicle will dry out rather quickly.

This guy does great videos on car detailing. You can pick up a lot of tips and tricks and see the end result.

You can see him do it at about 5:15

Probably not ideal everytime, but I would pop the doors off and as others have mentioned, hit it with low pressure power washer or just the garden hose flow to get most of the area.
The electrical port has that spring loaded cover that will snap over and keep water out for the bigger wash, followed by a little washcloth work to clean up the port cover and inside if there's dirt/dust there

I'm going to hit it with a power washer, just don't use a stupid powerful nozzle and don't stay in one place too long.

This is the only area I plan on ceramic coating simply for it's hydrophobic properties and durability.

On the rest of the car, ceramic coating is a wonderful trick to have you turn out your pocket books.
Why do you say ceramic coatings are a trick? Especially since you said you are using on your door jambs. Just curious

Or you could use a bucket and a rag/brush. I guess that’s too hard…….

I'd just use the hose with a sprayer head and a rag, should come out easy. Also apply some wax or spray on wax or 'ceramic' coat to make it easier next time. If the electric connectors there aren't waterproof we have bigger problems than some dirt...
