I went with powder coating for durability. The color isnt an exact match to the paint but is extremely close.

Dumb question. Can you drive without the beauty ring? Was planning to drop mine off at a place to get powder coated, but not sure that's a good idea.

I had considered painting them CO to match the body. However, after having it out on the trails around here, seems I am going with "rock rash" instead.

Yes, the rings are just decorations essentially. They hide the bolt holes drilled in the wheels for the actual bead locks that you need to buy separately. If you plan on getting the bead locks you may want to protect those holes as they are threaded and you don't want them to be damaged. Otherwise, they can be just left alone.
