I have driven 2.7 10 speed and 2.3 10 speeds and 2.3 manuals and about every rear end ratio. From my stand point they both seemed very similar with the 10 speed auto, no real difference around town or on the freeway. I would say motor wise not to worry as the ford 10 speed has proven to have enough gear ratio spread to make it a mute point.
I bought a 2.3 10 speed with 3.73 gears, it drove almost exactly like the 2.7 wildtrak demo. Offroad there may be some difference and on a steep grade the 2.7 might hold a lower gear.
