Just for reference I plan to swap stock tires at dealership with 285/75R16 BFG KO2. The tire size on BFG’s website recommended 7.5-9 inch wide wheels, but I have done 4 trucks with 7” wide wheels and those same size tires. I have had no regrets/problems in over 30 years.

Here are the wheel details. The silver steels are 16x7, the black are 17x17.5

It will be totally dependent on what the recommended rim width is for any particular tire, and your tire shop's willingness to potentially violate that recommendation.

Honestly, 7" width is pretty narrow for most larger A/T or M/T tires.
