So while i know some stuff. Im not familiar with all of it. Alot of people might not be either and how the tech improves off roading.

The bronco will have buttons on the dash for this tech , but what do they do and how to they improve certain situations?

1. What is front swaybar disconnect? (know this but other might not)
2. Rear locking differential?
3. Front locking differential?

Rear and front locking differential: when a diff locks, it forces equal power to both wheels on that axle, instead of putting power to the path of least resistance. this would help in a situation where one wheel was hanging off the ground going up a steep slope and (if the diff wasn't locked) that wheel would spin the most. locking the diffs would make power go to both wheels on the axl and most likely get you up the slope.
here is something explaining sway bar discon.

Fordboi is right about the lockers. They will be useless to you unless you actually offroad your vehicle.

The sway bar is literally a bar that connects your two front wheels. Its purpose is to reduce lean while turning or cornering. The downside is the bar also reduces the amount of travel the suspension has. You disconnect the sway bar to get back that travel. You can either buy the fancy auto disconnect or there are plenty of aftermarket options. Its literally two bolts you disconnect.

Agreed. I'd even call it worse than useless on-road. Potentially dangerous in most situations. Try turning a corner on asphalt with a locked diff, and you'll get a new understanding of "Bucking Bronco"!

A four-wheel, locked-diff Bronco burnout would be cool to see though. Hehe.

potentially a dumb question - but I'll ask anyways.

HOSS Suspension - what is that?
Are the GOAT modes really going to be important/valuable, or are they more of a marketing gimmick?

There is actually a lot more to it; there are two different 4wd systems,
- 4x4 with part-time selectable engagement
- Advanced 4x4 with automatic on-demand engagement

Plus the terrain management system with up to 7 GOAT modes
Broncoā€™s advanced four-wheel-drive technology is at the core of its off-road capabilities, and at the heart of it all is Broncoā€™s exclusive Terrain Management Systemā„¢ with G.O.A.T. Modesā„¢ that is designed to help drivers better navigate any type of terrain,ā€ said Mark Grueber, Bronco consumer marketing manager.

Up to seven driver-selectable modes are offered including Normal, Eco, Sport, Slippery and Sand, with Baja, Mud/Ruts and Rock Crawl for off-road driving.

Two 4x4 systems are offered on all Bronco models, a base setup and advanced 4x4. The base system utilizes a two-speed electronic shift-on-the-fly transfer case, while the optional advanced system features a two-speed electromechanical transfer case that adds an auto mode for on-demand engagement to select between 2H and 4H. Power is distributed to a Danaā„¢ 44 AdvanTEKĀ® solid rear axle and Dana AdvanTEK independent front differential unit ā€“ both with available SpicerĀ® Performa-TraKā„¢ electronic locking differentials for improved traction over rough terrain.

Available segment-first Trail Toolbox gives Bronco owners a suite of exclusive technologies to elevate their off-road experience. This includes Trail Controlā„¢ ā€“ cruise control for low-speed trail driving, while Trail Turn Assist tightens off-road turning radiuses through torque vectoring, and the innovative Trail One-Pedal Drive acceleration/braking control makes for more precise and confident slow-mode rock crawling.

Segment-leading levels of off-road capability are possible thanks to Broncoā€™s available best-in-class 11.6-inch ground clearance, maximum 29-degree breakover angle and 37.2-degree departure angle, plus best-in-class water fording capability of up to 33.5 inches. Off-road capability is further reinforced by exposed tow hooks in the front and rear and available heavy-duty modular steel bumpers with integrated Ford Performance accessory winch mount.

Broncoā€™s strategically placed steel shields protect critical hardware. Higher-capability models get an available front bash plate, plus shields for the engine, transmission, transfer case and fuel tank. For those taking on the roughest rocky terrain, Broncoā€™s available side rock rails are strong enough to support the weight of each side of the vehicle.

HOSS is a marketing hype term to describe a double wishbone suspension and a tuned shock absorber.

The only offroad tech I'm interested in is the automatic on-demand 4x4. I have about 3mo/year in snow hell, and don't like flipping back and forth from 4H to 2 when hitting somewhat dry pavement. Having a clutch pack in the T-case (I assume) will make my winter driving a little more bearable.
