Actually, the 78 XLT had square headlights, too. I still have a 1978 Bronco brochure and owner's manual.

I'm late as usual, but your update is correct. Squares were available the second half of '78. However, they were extremely interchangeable, 1/2 hour tops. I used to change the grill and headlights/headlight trim a couple times a year depending on what mood I was in. Hopefully the 2021's are as easy to play around with

And with the graphics, my first truck was a '79 Bronco Ranger XLT with that "Free wheeling " package. I'm strongly considering having similar decals made for my 2021

I think you could do just aswell without the cutback on the grill. It seems like just changing to a different styled grill and headlight with the signal below it and a stripe kit should do the trick. You may be messing with intercooler space like that. Unless you are extending the hood and everything else like the late 60s shelbys and winged mopars.
