This is the random ad that popped up right below your pictures. I thought it was a part of them. I was like damn, what did you just do to your poor dogs??
By the way I guess you don't get invited to too many cookouts in Austin with that traitorous school allegiance you have there.

I use my Traeger all the time. I love it! If you decide to use any "flavored" pellets (pecan, apple, cherry), be aware that they will not last anywhere close to the others. I use Oak or Alder regularly. If I want the other flavors, I mix them in with either of the main 2. Apple burns almost twice as fast as the Oak. On 225, 20lb bag of Oak - about 10 hours, 20lb apple - about 6 hours.
My Traeger is a Lil Tex that is over 15 years old. I got a Pit Boss Vertical pellet smoker as a gift and it does great too. Only issue with it is that it does not heat evenly throughout the whole smoker but I do not have a problem moving around the 10 chickens it will hold.
Thanks for the info.
I bought two big bags of the mixed wood pellets when I ordered the smoker. We did a brisket in it and it was good. Just not awesome. Too many smoke flavors at once I think.
I want to specify the smoke more and will use these up because they aren't free.
But after these are done I'll be specific with the pellets and any mix I try.
I miss my TX style brisket.
There's a place in Southport called the Smokehouse and they have, hands down, the best brisket I've had since some good TX brisket a couple decades back. And theirs might actually be the best I've had. I want to duplicate something even close to it once I get it all figured out.

I've gone from learning on my father-in-laws passed down propane grill to Char-Broil split propane/charcoal with smokebox to now this over the past 10 years. I expect later on I'll get another bigger smoker once I figure out what I can afford and use.

My brother-in-law has a Traeger and is jealous that I'm smoking the brisket cause he has been losing power off and on. I'm a big fan of mesquite and hickory myself. I think it's just something we learn early on in Texas BBQ that if it ain't broke don't try to fix it. It was a good thing that I cut it in two as I used Bellville Texas Beef and Brisket Rub on one and was about to put it on the other when my wife said she wanted my homemade BBQ rub that I typically use for pork ribs and shoulders. This way I get to figure out what I like and don't like about each on brisket.
Thanks!
I clicked the link and at first thought "What am I going to do with 12 JARS of rub?!"
Then scrolled down and saw I can get it individual.

Going to try it now!

I clicked that link and want to try it...I just can't justify a CASE of rub at $100. I'll never use 12 of them!
Shame they don't sell in smaller quantities.
Maybe I get it and give some away as Christmas gifts...now there's a thought.
My sister and BiL go out that way every couple of months and pick up some as they sell the individual bottles. I can get them to pick up an extra one and send it out to you.

I figured it out.
My stupid self didn't scroll down far enough.

*Edit:
Ordered a steak seasoning and brisket rub.
Thanks for the info!

I live in Houston though I tend to be the one that grills.

Good luck with Sark and Coach Banks and his Pole Assassin gf!

No BBQ is complete without pics of the finished product. So where’s the beef?

Actually just finished dinner with the family. Here you go:

Slab with Bellville Rub

Knuckle with homemade rub

Left side Slab, Right side Knuckle. I cut the Knuckle on the wrong axis but it was so tender it still fell apart. Slab was a little dry think I needed more marinade injected but still pull apart tender.
