I noticed the Jeep Sahara has a 3.6 L V6 and the Outer Banks will come standard with a 2.3L EcoBoost with an optional 2.7L EcoBoost. That seems like a significant decrease. Am I misunderstanding this?

The 2.3 and 2.7 are both turbo motors.

The 2.3 is a I4 with a single hair dryer.
The 2.7 is a v6 with 2 hair dryers.

Look at the dyno graphs posted elsewhere that show the hp and trq compared to the 3.6. Nothing to really worry about if they are enough compared to the 3.6.

The turbos have much more low end torque and a flat curve which you need off-road or even to just get a heavier vehicle moving. The 3.6L Pentastar has no guts down low.

Don't think there's any need to worry about the 2.7L ecoboost. This motor has been powering F150's for several years, and won Wards prestigious 10 best engines award in 2018. By the numbers, stacks up favorably against old-school naturally aspirated V-6 and V-8 for horsepower and torque, and provides lower emissions and better fuel economy. In terms of endurance, Ford GT uses the 3.5L twin turbo ecoboost and races at Le Mans with strong results. Expect they plow lessons-learned back into production cars.
