I think you're only supposed to use eco mode at slow cruising speeds with infrequent acceleration. In what scenarios have you been using it?
Yea eco is pretty much useless in all situations I have found. I used it in normal highway driving which apparently it can't handle.

Have been running a metric 33 for the last few weeks. Average mileage has dropped some. Didn't change gearing or calibrate speedo yet, so it's not super accurate:

Milestar Patagonia 285/75R16, up from the stock Base model 255/75R16.

going up 10% tire circumferance means you're actually getting 10% better fuel economy then your vehicle is registering before you re-calibrate. So pretty comparable to what you were getting before tire change.

What's your city/hwy driving mix? Not sure if it matters that much since the spread is relatively narrow.

4Dr Base Sasquatch 2.7L - Exactly 17.0 mpg

Most of these were highway miles driven in Normal mode. Sasquatch definitely hurts.

According to my dash readout I'm getting 13.8 liters/100km, which google tells me is 17 MPG. I've only filled up once so I haven't got any calculated stats from fuelly yet :p

2.3 4 door BL w/ manual

According to my dash, I am getting a little better than 16 MPG. Factory equipped it was getting 17 MPG. It went down when I went up to 35s from 33s. 4 door Badlands, V6, Auto on whatever dealership put in it. Most likely 87 octane. Base altitude is 6,00 feet. I did not buy this for Miles Per Gallon, I bought it for Smiles Per Gallon.

We have put over 7,000 miles on our Bronco (Badlands with 2.7) and are getting 20.6 mpg.

Yea eco is pretty much useless in all situations I have found. I used it in normal highway driving which apparently it can't handle.
All eco is going to do is upshift sooner, and dampen throttle response. So if you press the throttle 30% of the way it may give you 20%.

Sport mode would be the opposite. More reluctant to upshift, and if you push the throttle 20% of the way, it will give you 40%.

Sport mode won't make the truck faster, and eco won't make it slower - except for what gear you may be in. Starting from a stop it's going to be identical at WOT.
