Family dinner tonight
- Smoked Canada Goose with a Jack Daniels pineapple glaze (Goose provided by dad’s hunting skills)
- Roasted vegetable couscous

Smoked in my GMG Daniel Boone Prime WiFi for 3hrs at 200. Did a Jack Daniels Brine injection 90 mins before.

I mix my woods when I smoke pork ribs. Cherry, pecan(sparingly), And Apple. The foundation is simple oak lump coal. I soak my wood for a week. I get good clean sweet smoke of that mix everytime. Brown sugar spice mix dry rub and the secret to mine is Cocoa powder. It helps bring more smoke to the meat and gives tons of complexity to the flavor. It doesn’t take much of that in the dry rub To work it’s magic.

I normally do a apple and hickory mix for my ribs. I dont bother soaking wood anymore.

A few recent smokes.
rack of lamb with a garlic herb butter.
And last night A flank steak with a chimichurri sauce.
Both turned out delicious.

Just today finished building this offset smoker. My fave machine is the Hastybake 131. I'll bet I'm the only person in the NW with one as they're built in Oklahoma. They're awesome cookers!

Got a new smoker a couple months ago.
Lone Star Grillz pellet smoker.
It is awesome. So easy to use. Can smoke while I’m at kids games etc. this smoker is a game changer. Puts out amazing food.
makes me look like I know what I’m doing.
