Best thing I have made so far are these smoked Korean ribs using baby back. So damn good. Got myself a GMG Daniel Boone Prime WiFi during Covid, glad I did!

@RLW what temp did you smoke the prime rib too? Did you sear it afterwards?
I smoked the prime rib to rare. 120. I did not sear it. Some people say to sear tritip as well.
I have tried a sear on a tritip and I honestly thought it was better without it.
And I could get it to the exact temp I wanted without potentially over cooking.
So I won’t be reverse searing anything unless someone can change my mind.
My personal experience is it’s an extra step that doesn’t add much and I actually liked the tritip better without the sear.

just my limited experience.

Big Green Egg.

Brisket is my favorite. Salt Lick beef rub, smoke at 225 until brisket hits 165, wrap in pink/red butcher paper and back on the smoker at 225 until brisket hits 195-205. Should be able to poke a toothpick in like it’s going in room temp butter. Place in a cooler for a few hours.

Baby back ribs, 3-2-1 method.
Pork Butts, Beef Ribs and crank it up for Pizza night.

Smoked a duck for the first time today. Turned out well. Could have been better. May have smoked it 5 degrees/ 15 minutes too long, but was still really good.

My last few weeks smoking. Butt, brisket and Rib Eye roast. Made 3 racks of ribs too not sure why I didn’t get any photos of those! I always smoke too much and freeze for easy dinners later.

I've got a Weber grill with a smoker attachment that works fantastically. My specialty is brisket, nothing special. Salt and pepper. Mesquite and Cherry wood. Smoke for 6-8 hours depending on weight, wrap it up in butcher paper and keep it on heat until it's done.

Side note, I also have a pizza oven attachment for the weber. It's amazing.

Got this monster tritip going on the recteq (rectec) tomorrow morning before church. Injected it tonight and will be smoking it up to 210ish and serving chopped brisket style. Ridiculously good, can’t recommend it enough.

I think I saw one like this at Lambeau tailgating before Bears v Packers last December. Guy told me he could fully cook ribs in like 1.5-2 hours on this. I tried them, they were delicious.
