I did a ton of research and found another thread around here that sort of did the same thing I wanted (although they reinforced it a bit more - can't find the thread now, though ... sorry!)
But here's how it all turned out and really happy with it! I was able to load both kayaks myself and unload both myself with the wheels. Even at 5'11", I had to keep the tie down on the back and use that as leverage to pull the kayak out a bit before I could get enough leverage to tip it down. I do have some old pads that went around the crossbars of my old one I put on the very last rail to just use for resting it there before getting situated to push it up. No issues with hitting the glass, or even having the 'tire in the way'. Tried it both with the gate open (window down) and gate closed and honestly, liked it with the tailgate closed more since I could rest on the tire if needed.
But the SweetRoll thing is super easy to use, even on a '22 Wildtrak with the extra height of the tires, @TrailRax, and the extra height of the bars.
Rack: TrailRax 4 door with Pax Rax
Plus I have the reinforcements on the TrailRax
Yakima Parts:
I went on a quick HWY run getting up to about 75-80 and you can hear some wind at the front but was super stable all around. No movement. I will probably try and see if I can pull them a 'bit back' so it's more angled 'down' and try another run to see if I can get that draft sound down ... but I'm kind of used to it since on my old car (Mazda CX-9) they front stuck waaaay out and we just got used to it.
Oh, the BEST PART! With just 4 key unlocks and a flip of those towers, you can take the whole setup off in a couple minutes since I can't use my topbox and gear boxes (camping stuff) with all that kayak nonsense up there and the Landing Pads have a cover so you just place it over and it's just 4 little bumps on the rack when off. Much better then the J-Low carriers I had where I had to remove each carrier piece from the bar itself. I will see if I can update some more pics with it off and the bars for those curious.
Another note, I was able to get a 12' Yakima Skybox on the TrailRax without any extra hardware ... went straight to the bars that was placed (no bars removed also, as I saw some people had to do that with the Thule - unsure about all Thules, but the Yakima I have is flat on the bottom).
Quick edit: The kayaks are the Perception Pescador 12.0 , the Bronco is all stock outside of racks, mudflaps, and some other internal things.

Yakima Parts:
- Yakima Landing Pad 26 (this comes with a long bracket that can attach directly to the rack itself)
- Yakima Skyline Towers
- Yakima 70" JetStream Crossbars (luckily had these from old car)
- Yakima SweetRoll Kayak Carriers (so rad!)
- Yakima Paddle Holders (these are definitely not necessary, but pretty great and easy to use, I just got them since I was on a spending spree getting this set up with all the new parts). I did have to mount these directly to the rack, since where I placed the bars are so far apart, the paddle really wouldn't work on 'the aerobar' at that distance.
- Bunch of straps I had from previous stuff to tie down
