Are the sport, eco, normal modes in the manual? My understanding with those modes is that it adjusts when the vehicle shift gears, are there other variables they adjust to maximize fuel economy or performance?

I don't like the light background in neither instrument cluster nor infotainment screen.

The "night mode" is not a good workaround - it is usually designed for complete darkness =(

Generally those modes also adjust throttle sensitivity and maybe steering effort.

Anybody else getting a 7MT and hate the tach? I drive by sound anyway, but I’d rather the analog speedometer on the left be a tach and the speed be digital. Hoping the 7MT version gets a digital dial looking tach on the right.
That would be cool but my first '65 Mustang didn't have any tach at all it was optional I think it was called the Rally Pack. Like you said, it's just by feel and since the bronco isn't a drag racer 🤷‍♂️

There is no way to permanently disable the auto start/stop but there is a button (“A” with a circle around it) that you can push to disable the feature temporarily. You’ll need to push the button every time you start the car. Not perfect but much better than my wife’s new Subaru that has the disable feature 3 menus down on the flat screen.

On a Raptor, the cobb access-port can permanently disable start/stop. I am sure Cobb will make this feature available for the bronco when it releases a tune.

Sure would be nice to have a configurable gauge display like the my '20 Bullitt.
Or did I miss that feature ?

It definitely looks slow to respond. Hopefully that's not the case in production models. Also, too much white stuff going on the screen. Needs more dark mode. Can the screen be turned off? That would be cool too. Hopefully the main dash screen can be.
