But it also didn't take much to extract power out of them in the much lighter cars that they were put in.

Depends on the car, and you got far less bang for the buck performance wise out of a modern turbo motor. Actually even 90s turbo motors were better. That's why 2jzgtes get swapped into everything ( just behind the LS) and not Mod motors.

Don't get me wrong I prefer the sound of a v8, v6s sound like garbage ( I6s are a little better).
