This is probably the dumbest thing I've seen from TFL but it does raise a question on Towing capability ... why is the Bronco limited to 3500 lbs towing? Is it because of stopping power or what? I'm confused as to the limit

Change the coil over shocks but this jacks with other abilities the Bronco was intended for. If you really need a vehicle like that then you might be looking in the wrong toy box. Try something designed to tow/haul with minor off roading in mind. Like a Ranger pick -up.

I'm definitely surprised by the outcome here, however there's too many variables. Tires would be a very significant one, but just the sheer driving abilities of both these guys could be enough to swing this one way or another.

It was fun to watch, but this isn't a scientific experiment.

Yeah, that's a pretty terrible way of actually determining anything useful. It depends on a lot of factors that you usually wouldn't care about, such as weight over an axle, kinetic coefficient of friction, etc. Its only value is being fun, lol.
