That's in your vehicle settings. Don't need Forscan for that.

Tires are too big to fit with the crash bars. So, they remove them. Speculation is that Ford does not believe the bigger tires present the same potential issues, so they are comfortable with their removal. But, that second part is not confirmed.

If you have a passenger in the car and you're running in, they may want to keep the AC/heat on. Or even listen to the radio.
