Dirty Turtle is a great starting place. Smaller park, lots of good inner trails with varying difficulty with an outer circle that is super easy but enough to be fun. It's about an hour NE of Louisville.

Blue Holler is an amazing park and extremely large. Try and hit it up when they do not have a lot of events going on. Trails are extremely varied and easy to get confused on if you do not have an offline map of the park. It's down near Mammoth Cave area.

Then there is the Kentucky Adventure trail/tour. That one is perhaps where you should start. It's a 1,000 mile circle throughout KY that links up with different offroad parks. Majority of it is gravel/dirt and overlanding type trails that connect you in to the more advanced parks.
