Still sluggish with the Procal? Mine jumps pretty good in normal mode with it, I don't use sport, it's too jumpy. I also added a GPE ported throttle body and that helped the throttle response for sure.

I noticed a couple of wires wrapped in cloth tape going to a connecter next to the radiator overflow bottle. That section is right up against the passenger fender and it's a sharp edge. I doubt it's that simple, but most of the other wiring is buried under stuff.

No, I haven't done any trails so I can't comment on that. When I had 35" KM3's (on stocl suspension) they would rub on the front mudflaps at full lock going up a hill or over curbs. I removed the mudflaps and the 37's with lift haven't rubbed on anything so far.

Is there any chance you could have bumped a wire going to the transmission? One of the older GM trucks I had the previous owner had a line going to the trans rub and scrape off the insulation and ground out causing really firm shifts. The oil change doesn't really make sense in terms of...

You may want to look into aftermarket wheels which will give you the better offset (+12 to -6 works well) and reduce the weight compared to the stock Sas wheels by 7-9 lbs and that helps offset the tire weight increase. I have 17x9 with -6 offset and BFG KO2 37's C rated which run a little...
