This is probably a simple question, but I now have two tires that have suffered basic flats due to screws in the road. I’ve plugged both successfully, but now I’m unsure what to do..
I off-road once a month or so, but haven’t with plugged tires, assuming that’s a bad idea.
I’d like to get a different tire model eventually since the OEM’s kick gravel up and cause paint chips. Is my only option to get five new tires now?

I've run on plugs for 5+ years without issues, unless you loose air I'd run'em...personally.

Take the tires/the rig to a tire shop for them to properly plug/patch the rubber? A proper grind down and vulcanizing should be as good as new, assuming the puncture locations/sizes/angles are all within repair

(I’m assuming you used a DIY roadside plug kit)

As stated, plug'em and run'em. Or, if you have concerns, take them to a tire shop and have them patched. Definitely no need to go out and buy 5 new tires unless you just really want to spend $2500.
