What happened to the factory modes after you install the pro calibration. My understanding is you have to run high octane fuel . But what happens if you turn the dial to eco mode? Also spot mode etc. are they all overwritten by the new calibration ?

They all still exist and function more or less the same as they always did. Just with a few more horsepower.

I'm honestly surprised how well ProCal really wakes up Eco Mode! (/s)

ECO mode on the Bronco Sport is something everyone should try once (and only once). Nothing like taking a 3Cyl engine and deactivating a cylinder. ECO on the big bronco is ... just gimping the accelerator pedal and shutting the shutters for some godforsaken reason - although I do find it's good at helping new people learn the clutch.
