Does someone know if it's possible to order a Bronco without a tow package and install it later? Is it just more expensive? I mean not in the theoretical feature but now?

Of course, and if you don't need the 7 pin connector for a trailer brake it's a fair bit cheaper to do it that way (hitch is only $100, forget what the wiring harness is on top of that but not much)

I am not really familiar with trailers, but eventually, I want to have a trailer, something like RPod. Does it need brakes? And if I need this connector can I add it after?

I had ALL the constraints. MIC, tow package, Lux, 2.7, Sasquatch... took delivery on Christmas Eve but I had my reservation on the first night with a 3 hour time stamp.
Gives me some hope I'll get a production date soon

I am not really familiar with trailers, but eventually, I want to have a trailer, something like RPod. Does it need brakes? And if I need this connector can I add it after?
As of now, the end-user-install wiring harnesses are 4-pin only (just for brake lights and turn signals). I have no doubt in my mind someone will eventually release a 7-pin retrofit due to the number of people skipping out on the tow package to get their vehicles earlier, but as of the writing of this post, the only way to get it is through the tow package from the factory.

Whether you need that or not depends on what you're planning to pull with it and what your state laws say. Here in Texas any trailer over 4500 lbs gross must have a trailer brake of some kind, but even then you may not need it since it can be a surge brake (activated by compression on the hitch) instead of electric (activated by the tow vehicle via the 7-pin connection).

In a nutshell, if you're doing light duty towing with utility trailers or the occasional U-haul (they have surge brakes), you probably won't miss the tow package. If you have plans to tow a camper, car hauler, or otherwise wish to explore the top end of the Bronc's tow rating, keep the tow package, you'll want that 7-pin connector and the ability to add a brake controller down the line.
