Tire rub at full lock after 3 months of no rub???

I have a 2 door big bend and at the beginning of January I had a 2 inch lift and level kit installed as well as added Toyo open country AT III 35x12.50r17 tires to the stock wheels. I had no issue with rubbing at all until the last couple of weeks. I noticed now that I get a little rub when pulling in or out of a very tight parking space at full lock. Just wondering if I would need to increase the lift or if adding some wheel spacers would do the job? It l's as tall as I can get it for it to still fit in the garage, so I would hate to have to lift it more.

I would check and see where you are getting the rub. It may very very minor and could be resolved with some very minor trimming.

And if it is very little rub, it will go away as your tires wear

What would cause it to happen after a couple of months of no rub?

Yeah, pressure is the same as it was when they were installed.
Other than a shift in adjustment, that's the only thing that makes any sense. Lower pressure would cause a bit of sidewall push out as odd as that might seem to some people
