I am going to 37's and Fuel rims! My question is do I stick with the 17" rims or go to 20"? I am going with a -12 offset. Is that enough? Please help, I am so confused!
With that much negative offset your tires will stick out past the Fender Flares, even the wider Sasquatch Fender Flares. I've had wheels with a +18 installed and had plenty of room between the tire and the Upper Control Arms.

Personally, I would go with more offset. +20-0. Even the stock Sasquatch Wheels at +30 have been fine for most.

Not planning on any wheeling! More worried about ride quality?
From my limited experience of running 37" Geolander MT's on SAS wheels, It rides nice. I think a 20" wheel would ride harder as there is less sidewall. YMMV.

Also check the weight difference. You get get lighter with the 17” wheels.
