Only option was an impulse armrest safe. My wrangler had a lot of curious attention when I had the roof n doors off. Everything else stock and depending on my budget/abilities. Love the wrenching opportunities these trucks provide.

Get the auxiliary switches and mod front bumper if you can swing it. I have the auxiliary switches and wish I had done the mod front bumper.

I have essentially the same build. 2dr base, carb grey, manual, with just roof rails and switches. It came in a couple of weeks ago and it's been a blast. I'm sure you will be happy with yours. But I definitely second the suggestion about the switches though. For the low price, it's worth it if you ever want to add anything, and I believe all you're losing is the sunglasses holder that would be in that spot. Plus, I have to say, even if you don't hook anything up to them, the switches feel pretty sturdy overall and are oddly satisfying to flick back and forth, even if they don't actually do anything.
