With the roll bar so far back, you won’t gain much room. the 2” the deck is lower will be taken by the .5” of platform you install across to make it all flat. Won’t gain any width.

Seems like lots of people are doing a rear seat delete on the 2 door. Those back seats are really tough to get in and out of. I just keep mine folded up all the time - 90% of the time, it's just me in there, so I don't miss them.
