Auto is easier to drive on road and off road, for on road, to me, easier means more chances to be distracted, you can use 1 hand for steering and 1 hand for your phone or a sandwich (we all have done it). For a manual, both hands, both feet and ears are necessary (ears for knowing when to shift), this, like others have mention means more engagement on the road, more attention.
You are also more inclined to engine brake with a manual than an auto, since you are shifting a bunch. This to me is added safety that I like, especially in bad weather. Not to mention a little less stress on the brakes over time.
After attending off-roadeo however (all they had was autos), I can see the benefits of off-roading in an auto, the thing make the trails we did seem easy, we did a section where all we did was set the bronco to 3.5mph, took our feet off all the pedals and it just did its thing. You can also have two hands on the wheel at all times, use left foot braking, trail-turn-assist, etc
