@ADV Fiberglass Summer is fast approaching. Any chance you might take these on?
We are focusing on our fenders, rear quarter kits, and hardtops at this time. The door inserts (if we decide to move forward) would be after those are all completed.

Question: What is the benefit of these? Why would partial doors be better than full doors or no doors, especially when the price tag might be in the $2-4K range? I don't get it, but there might be a reason I don't understand.

It’s an aesthetics thing. They hide the unfinished door jam area when the doors are removed and give the 2-door a retro roadster look. Not a lot of functional use, besides maybe keeping some water/mud out when you have wet roads. If you like the step-over door insert concept, but don't necessarily care for Ford's (I think those in the pic above are Ford's), tell us what you'd prefer - design input is welcome!
I'd be interested in a roadster insert for the front of a 4-door (just the front though). I believe it is not as wide as the front door of the 2-door. Maybe you could make a two piece insert that fits both the 2-door and the 4-door. Hint - more people bought the 4-door, so address that market too.

It would also be nice if you could incorporate some sort of leading edge flare or mud flap mounting point to keep the mud out. On that note, I did a fender delete and the amount of mud, dirt, salt etc. thrown up on the side is annoying - door handles and mirrors caked with grime. I still like the look, as the stock fender flares were too wide for my skinny pizza cutter 255/80R17s. Maybe I need some ADV quarter panels for the clean look I'm after.

Me too - I was thinking about it, and perhaps you could make a two part door insert, one for the hinge side and the other for the latch side. In between would be a step pad that finishes the look and connects the two somewhat (so really a three piece). The middle section could come in two different lengths to accommodate the 4 door vs the wider 2 door. I also don't want to climb in over an additional 3 inches of door insert, so the middle section would only be a step pad (or omit entirely).
