I've got a Heritage that includes the Sas and want to save the 315s/stock rims for when I take it on trails a dozen times a year. In the meantime, I'd like a narrower street-focused tire/rim for daily driving duties. It's a manual if that makes a difference.

I was looking at doing a 17x8.5 ET0 so it doesn't look like it skipped leg day, with maybe a 285/75R17.

Not sure what tire would fit this need? Maybe the Hankook AT2?

Sounds reasonable since only slightly shorter… I prefer the Heritage white slots so I’d likely do the fifteen52 White Analogs.

Any idea if my rim width and offset would look “normal”?

Bear in mind I’ve never researched this topic so don’t hate on me if I’m wrong 😏Apparently the Ford 17x8.5’s have a 30mm offset which pulls the wheel in about 1.2”. The 285/75 is 1.2” narrower so about 1/2” less from center. Therefore a 0 offset would put the outside of the 285/75 about 1/2” out from the current 315/70 profile. I’d still consider a positive offset.

Nitto Recon 35x11.5x17 is the same width as the 285.

There's a Kenda Klever at 35*10.50R17LT that's 11" wide and close to a true 35". I want to say I've heard folks who run them say they're good on the road. Definitely a pizza cutter. Almost $450/tire, though.

I've been running Firestone Destination A/T2 on several vehicles and I really like them.

I'd definitely go with a 285 to save fuel economy. As you posted a 285/75/17 still looks tough. The biggest the Destination A/T2 goes is the 285/70/17 though.

The Conti comes in larger sizes AFAIK.

Light wheels will help a ton too.

RTR wheels are 22lbs each.

buy some outer banks take offs. those come with a road tire and 18" wheel can probably be had for very cheap.

Why don't you find an off-road wheel that you don't mind getting scratched up and switch the 315s to them vice using the Heritage ones? Ford price on the HE-L wheels are over $900 each, I imagine the standard HE are the same.

It's not worth it. I've tried a bunch of different combos, at one point I had 5 different sets on hand. I ended up pairing my favorite wheel with my favorite tire and run that 100% of the time now.

The Territories are a really good daily driver tire and swapping them onto a light wheel makes for a peppy ride.

Nitto Recon 35x11.5x17 is the same width as the 285.
OP wanted a 285/75. What's the diameter on that Nitto? BL has 285/70 which is 32.8" while 285/75 is at 33.8" (for 17" rims). The SAS 315/70 is 34.3" even though Ford calls it 35" (So while not as wide, from the side a 285/75 is just half an inch less than the SAS in diameter). Since OP already has SAS and is going narrower on width, no fit concerns such as rubbing. Just offset. My guess is he wants 285/75 because it is just about a tall (diameter) as the SAS but narrower for street handling. Can't say how much it will help. I have read a post where someone on the forum went from a stock 265/70/r17 on a BD to a 285/75/r17 with a 2" lift and said it drove on the street just as well.
