Seems like that's exactly how they fold:Has anyone seen any info on rear seat configurations without removal? Like, can the seat cushions fold UP so that my dog can ride in the backseat without being ON the seats?

Any guesses as to the the rear seat removal on the 4 door?I take seats out of vehicles all the time to do leather installs at work. Guaranteed it'll be easy. Rear cushions on 2 door flip forward, most likely 2 bolts each. Backrests would come out separately, no more than 4 bolts/nuts per side.
*This is one thing that's good about 2 door wrangler is the rear seats are quick release. However rear headroom & legroom in 2 door Bronco is probably better as a result

A couple bolts on the front legs under the cushion, then you can flip the cushion up to access bolts under the backrests. Another 2 behind the seats in the cargo area and bingo
