I have the same problem and wish there was a solution. I update Android Auto every time there is a new update but continue to have the same problem. It will just disconnect randomly... maybe.
For example, I have noticed that every time I drive through a certain spot, it will disconnect. So it seems to be related to a cell dead spot. But that doesn't make sense to me because the WiFi connection between my cell phone and my Bronco should have nothing to do with my cell service. Furthermore, I download my maps for offline navigation and Wireless Android Auto works great even when I'm far from cell service. I am still troubleshooting but very confused why it randomly disconnects but also disconnects in the same spot every time.
I've noticed there's a certain spot like that here in Lexington. Redmile close to the Broadway intersection where it does exactly what you describe. My credit union is in that area so I'm there quite often and just like clockwork it happens at the same spot everytime I approach it. I've come to expect it. This happened on wireless Android Auto and wireless CarPlay. I say it just some kind of interference as we all live in a vast sea of radio waves. Cell service is definatly not an issue in this location. Its smack dab right in the middle of metro Lexington with a ton of private student housing for UK.
