I know how each one works and how they switch the transfer case and lockers and stuff, but I would like more technical info. I was wondering if they change fueling, or timing. Maybe it’s in my head, but I seem to hear engine sounds different in Baja mode. Has someone done a detailed write up on actual program changes?
And YES! I have searched (doesn’t mean I didn’t over look it).

I don't think that they change ignition timing or fueling (could be incorrect on either/both of those), but they definitely change the mapping of throttle pedal position and transmission gear to engine output torque, shift tables, steering tuning, ABS tuning, ESC tuning, TC tuning, and in vehicles with selectable exhaust modes they can change the exhaust sound.
