Probably not a significant MPG improvement with the 2.3L. I'm thinking it's probably only going to be around 2mpg on average.

Sure the extra punch of the 2.7L would be nice, but I'm not paying an extra $3000+ and giving up the MT to get it.

I don't expect better MPG out of the 2.3 just because it'll have to work harder to do the same thing on a heavy 4x4 but that's just me.

I average 18.1mpg in my supercrew f150, 6” lift, 35” MT tires with a heavy foot and travel at speeds of 70-75mph out here in CO. So I would expect the 2.7 in the Bronco would be better than that.

The MPG varies greatly with EcoBoost engines on how you drive them, but you can probably expect them to be pretty close to one another, maybe 1-2MPG difference.
What about with Sasquatch?

Lifting my JK RUBICON and putting 35 mud terrains in it dropped the MPG down to less than 15. If I drove it 80mph it got around 13 if I remember correctly.
Sasquatch will get much lower MPG, not just from the bigger tiers but also from the ride height due to the lift.

I don't think its going to be a big enough difference to matter. 1-2 mpg at most.
