We have littles and one threw up on the way home. Vomit went through the car seat into the center rear seat and soaked in. Don't worry, the baby is recovered. Any ideas how to remove this wonderful aroma?
I would use Tuff Stuff It's in a yellow can multi-purpose foam cleaner works great!

There is a lot of good advice here already. Carpet shampooer or I have even had good luck with cleaning as much as I can, then using a carpet brush for drill along with a good carpet cleaner to pull out what has soaked in(Chemical Guys makes a decent kit for about $20-$30 with both that you can get on Amazon).
The REAL trick here is getting all the hard to reach places, and those will be the ones that holdout on the smell. It is going to take time for the smell to dissipate unless you feel like unbolting the rear seat so you can get to all the nooks and crannies you are going to miss.

Quickly, eat good scented foods like citrus so if you vomit in the car the smell will be more pleasant than what you have currently.
Bonus points for eating limes so the "Eruption Green" better fits.

I ate Starbursts and Airheads prior to this.

OMG, eating a package of Starbursts, Airheads, and Sour Patch kids is what caused my son to vomit in the backseat of our Mustang just as we got back from a road trip. That was maybe 15 years ago and as an adult we still give him a hard time about it. Luckily the seats were leather, but I still had to take some of the trim paneling and the seats out to get all the areas. Not going to lie, it was windows down and a lot of cover up air freshener for awhile (which really just made things smell like Pina Colada vomit).

I had this happen in a previous vehicle. I used Pine-Sol diluted in water to clean the car and carseat. It worked well to get rid of the smell.

I started eating those when I knew the trip went to the bathroom was eminent.

Are use those to minimize the impact, and it worked.
