Its capitalism. Ford is not hear to make your dreams come true, they are here for money. We can all wish a cheeseburger didn't cost $16 or gas cost $3-$5 or whatever, pick you pinch point. At the end of the day companies will do what drives the most profit. If that means steering people into a higher model or trim package then they have succeeded. And if you factor in the efficiency gained by grouping options togther for manufacturing then imagine what a Bronco would cost if you could buy every option alacarte? Every Bronco would be a bespoke build. It would surely drive the base price up significantly.

then you would have a First Edition and Ford wouldn't be able to charge an outrageously high premium for them.

Just get a Badlands and upgrade all the options (e.g., 2.7, auto, Sasquatch, leather) to what is effectively a stealth First Edition. If the badge is really important to you, you can probably buy one cheap online or just create a custom Sasquatch badge.

I think so. From Moab someone said it locks one brake, by using the electric e brake. Offer still holds.
