I read somewhere that the larger engine results in a shrinking of the internal passenger volume... doesn't make a whole lot of sense to me. Has anyone looked into this or have any evidence for/against?

I believe you heard that a bigger engine means the “driver is compensating for something” wrong as that’s the only cabin volume shrinkage you can expect

It absolutely does. There is less interior space with the 2.7.

The controls for 2.7 only party tricks have an extra button bulge or two. So there is less free volume in the interior. The amount is something you could fit in a thimble most likely, but it is there.
