I’m looking at buying a set of 3 pod fog lights to go into my bumper, and i want to get a set with the amber DRL option. But i do not have the factory AUX switches, so what are my simplest options for grabbing power for the DRL? Will be adding a switch for the regular fogs but not sure what to do for the DRL

I would tap into the DRL wire. If the amber DRLs are low current, you'd probably be fine with just that, but could throw a relay on it if concerned.

This is how I would do it for that application even with AUX switches. Doesn’t make sense to me do have to toggle a drl on and off manually. Would 100 use a relay though.
