I plan to Rhino Line the MIC roof, along with the majority of the rest of the black plastic on the car. Unless anyone on here can tell me a reason that would be a bad idea?I hope to add a coat of... something (post recommendations) soon after delivery and maintain the top yearly-ish.

Weight would be the only downside, just depends on your thickness. Go with Line-X, it's a better product. Cerakote looks like a good product, buy I think any ceramic coating would help prolong the plastic top/fenders.
