I've never driven a vehicle with this feature. Is it really that bad?
IMHO ... no it gets very over exaggerated. My AC still works on those 98 degree days here in Minnesota and I can time the re-start by being aware of my surroundings and easing off the brake pedal without moving forward.

I wonder if you can wire it to one of the AUX switches!
I already has it's own dedicated switch. It should only be a matter of "jumpering" out the switch. I can't see it being any more complicated than that. Unless there's a weird inhibit associated with it. I would hope not though.

I will likely also want to disable this. Never had it in a car but it sounds annoying. That said, i imagine it exists to improve fuel economy at idle. How much might disabling it affect mpg for city driving?
It won't make much difference unless you are in a decent amount of driving with lots of minute+ long stops. What I've seen seems to indicate that until you get to about a minute of engine off time regularly it won't make much difference.

From what I understand - if you plug something into the 110v outlet Like an LED nightlight ..it will keep the on off start from activating. There should be one right behind the center counsel but I can’t find a pic. I can’t tell if this outlet at the rear is 110v.

Exactly. While my F150 doesn't have the ass feature my routine is push to start / and then 2 pushes of the transmission button to select Sport mode. It is all muscle memory now and I don't even think about it.

My Bronco routine will be push to start / ass / (Sport mode, sign, if only the BL had it) / and then flip a few random overhead toggle switches back and forth for the fun of it.

I believe that they have this feature because otherwise the vehicle won't reach the minimum fuel efficiency requirement, at least that's what I read on jeep forums.
My slobbering carburated 5.0 will drive for 1/8th mile just on the fuel in the carb bowls... they might hold a cup? I let it run to drain bowls if I have to pull the carb off for anything, I need to time it but it seems to take forever and a day to idle long enough to get that done.

An idling engine doesn't need a whole lot of gas.

I think if in the name of MPG it would take a lot of stoplights to see much of a difference.

its a momentary switch I expect, as is pretty much everything in a car these days, converting it to a static toggle probably wouldnt do the trick. Aftermarket solutions are probably designed to send a pulse when the car starts.
All Ford start/stop switches are all the same in how they work, they are just placed differently and have different sizes. To make it work all you have to do is splice in the little harness and add in your switch that way the second you start the car, it immediately tells the car you’ve pushed the button

Telecommunications and networking. I started back when discreet circuitry was used. We used to design computers that would fill a house to do what’s in a smart watch today.

when you have 200million cars on the roads, it does add up.
Most of those 200 million don't have this "feature" and a likely significant portion don't use it anyway.

Given this is all electronics, shouldn't there be an easy way to plug in an OBD-II device like Carly or something else to just disable it? I've seen that app used for activating/deactivating all sorts of little features in other brands. I live in a city with short-ish traffic lights and plenty of stop-go traffic. The auto-start stuff is annoying AF.

It's annoying. My biggest complaint is the AC turns nearly off when it engages too, so it can warm up pretty quick depending on the temperature
Our Honda Odyssey factors this into the climate control and auto shut off.
If it's not cool enough in the cabin (or warm enough during winter), it keeps the engine running. If the engine shuts off long enough at a red light that the cabin is leaving the desired temp, it turns the engine back on and gets the temp back in control.
